Every normal bug I’ve eaten was served with the exoskeleton on by necessity. This produces a lot of sharp crunchy bits, so you get little shards of exoskeleton stuck between your teeth and gums. Also the “meat” of them doesn’t have much bite, like with a cooked shrimp. I’ve only had ants, grasshoppers, mealworms , and silkworm larvae though. Maybe a very large grub with plenty of salt, steamed and then deskeletoned would be tasty. I don’t hold out much hope with my insect experiences thus far though.

So are pillbugs, but people don’t seem to be eating those (at least in the US)

Depends on the species, some wood lice are up to 3.8cm in length!

They are edible, apparently, with a flavor similar to shrimp.

People do eat larger isopods, we don’t eat pill bugs or silverfish because they’re 90% shell by volume and taste bad.

I think people don’t like bugs because you can’t peel them like you can shrimp or crab.

Thankfully there are not many bugs big enough to peel and eat so it’s not really a thing.

Lake, river, and ocean bugs are also disgusting. Guys, if you don’t eat proper meat that doesn’t degrade human dignity, then just eat lots of beans with your vegetables like someone who isn’t insane.
