Jadzia may have been fine with it, but Ezri was not and said so right from the start. But Sisko being Sisko continued calling her Old Man; she just gave up because she didn’t have the same fight as Jadzia.
I don’t quite remember Ezri that well tbh, and I’m only in the beginning of season six of DS9 in my rewatch atm. I’lo kee0 an ear out though.
If you only ever call people by their family name, not only is it a sign of respect, you’ll never accidentally dead-name anyone. (Note: results may vary for cases of maiden/pre-married names)
