Having recently tried to make gnocchi, I have so much more appreciation for people who can make this successfully. Mine turned into little balls of sludge and were VERY unappealing.
There a many ways to make them, this one uses eggs for instance. I rarely use them.
Tough gnocchi are often from using a high protein flour, or overworking the dough which strengthens gluten and releases more amylopectin from the potatoes. Using sweet potatoes works well.
Oh yeah this recipe looks better than the one I used. I would never have thought to bake the potatoes instead of boiling them thanks for sharing this! Maybe I’ll give gnocchi another go sometime.
