Personally I did experiment with low expectations and some pleasant discoveries. And I found someone who cooks to ask for daily menu advice (grandmother :)
It’s going well. I’ve gotten really good at making burritos, but I need to add some variety. I don’t want to stop making the burritos because I know I can make them well, and they actually taste pretty good. I might phase them out when I find something to replace them with. I’m still looking for something new to make for dinner. It’s a huge improvement, though; I was eating pasta almost exclusively before this. Everything has been vegan, but I’m going to have a cheese pizza for my birthday tomorrow. I might try to make a vegan pizza, but I doubt it since it would be after work and already kind of late in the day.
Nice when brain agrees with stomach! Ideally I’d mix chicken broth grains with all-in-one cream soup. But normal one pot meals are much more satisfying to eat w/family :D
